Can you tell me the difference between very and much. When is it correct to use very and when is it correct to use much and when is it interchangable.

Hi,
I'm from England and I have to say that I agree with Matthew from Missouri. One of my pet hates is when someone answers, "Very much so." It might have become common place in society, even by doctors but that doesn't mean it's right! In my Oxford Dictionary, one definition of the word, 'So' means 'extremely; very much' so why repeat it twice? It would be tantamount to saying, "Very much very much." lLike Matthew I find this response wrong and discordant...
